Talented Head Chef required for Hatton Court Hotel Salary: £35,000 plus bonus. Hatton Court is located on the edge of the Cotswold escarpment near to Gloucester and Cheltenham. It has 45 double bedrooms, many with feature beds and whirlpool baths and the locally renowned 100 cover Tara restaurant which was fully refurbished last year. The hotel also has 2 purpose designed meeting rooms which can accommodate 20 delegates each, The Cotswold Room which can accommodate 80 for a civil ceremony and 50 for a seated function or as restaurant overflow in addition to a fully self contained marquee facility with its own kitchen that can accommodate 200 for a seated function and 300 for a cocktail buffet. We are looking to recruit a commercially driven Head Chef with experience of mid scale banqueting and quality hotels to a minimum 3 star/ 2 rosette standard. We are looking for a Chef who can develop and improve the entire food operation and control his costs consistent with the type of business that the hotel enjoys. Key responsibilities: • Control of food costs to achieve targeted food margin of 74% • Control of all food production and storage costs including labour, laundry consumables and cleaning materials • Planning, costing and implementation of all menu’s according to management requirements • Recruitment, training, development and welfare of all kitchen personnel • Compliance with Health & Safety Act and Food Safety Act for all food production and storage areas • Day to day management of all food production and storage areas Hatton Court is part of the Hatton Hotel Group, a small group of independently minded classic hotels and inns in desirable destinations such as The Cotswolds and Jersey.
